Living in a doublewide trailer I know what you are referring to with the walls. We have remodeled two of our rooms and the next one I'm going to work on is the bathroom. Here is what we did for my son's room. First off we removed the seams. This leaves a gap which you fill in with puddy. You sand that down with a sander to make it flush with the wall. You can also puddy any holes you might have in the walls as well. If your wall boards are warping you might have to take that out completely and replace them. Not sure how bad your walls are warping.
We chose the color we wanted for my son's room and we painted several coats on the walls. We didn't paint but to about waist high or so because we put up waitcoat which looks great, and a chair rail. We also took up the carpet in that room and put down laminated flooring with new baseboard and toeboard. The room looks great. We installed planation blinds. Did the work ourselves and it took about a month off and on.

We also have done repairs/replacements to a mobile home over the years due to damage (Huricane Bertha put a tree through our roof in 1996 and a leaky washer ruined an entire floor).
You can replace the original wall boards with regular sheetrock if you do an entire wall. We did that because not only is the sheetrock thicker, it helps to insulate against cold, heat and noise.
The strips can be painted the same way the walls are painted if you choose to leave them there. Or you can, as the writer above suggested, put putty between them and not bother to put the strips back up. However, if you use that method, you want to really smooth out the joints or it will show up worse than the strips over the wall board do. And yo have to keep in mind that those trailer wall boards weren't originally meant for painting or plastering so you need to be extra careful about your priming and sanding preparations.
