If you are going to undertake this big a job I would recommend doing it all the way and taking down the tiles -and the walls- to the studs. If you want to replace the floor tiles- most likely you will need to take up the pan and replace it as well. It is really important with showers that the pan is installed correctly to prevent leaks. I did this same type job in my home- but replaced the shower with a tub. I found it extremely helpful to hire an experienced plumber- as I needed to move the drain. He also helped me take out the pan- horribly heavy and dirty job- and put up the cement board. (I actually interviewed several contractors and made sure that they were willing to work WITH me to allow me to learn and then take over when I was comfortable.) I then took over and did the tiling from the tub to ceiling and put back all the new fixtures. I also tiled the floor and replaced the toilet. If you are going to invest the time - do all you can afford and do it right...hope that helps.
